Eggplant "French Fries"

Ingredients
  1. 3 large black eggplant (not purple Japanese version)
  2. ¾ cup quinoa flour
  3. 1 tsp cumin
  4. 1 tsp rosemary
  5. 1 tsp coriander
  6. 1 tsp black pepper
  7. 1 tsp Aleppo pepper (paprika is good substitute)
  8. Sea or Himalayan salt
Instructions
  1. Peel the eggplant with thin lines of black skin still on.
  2. Clean eggplant thoroughly and pat eggplants dry.
  3. Cut the eggplant into ½ inch wide and 3 inch height “French fry” pieces.
  4. In a bowl, mix the olive oil, rice flour and spices. (Can use coconut oil)
  5. Coat the eggplant pieces with flour mixture and place eggplants pieces on baking sheet.
  6. Bake for 20 minutes at 375. In a food processer, mix the red peppers, tahini and olive oil
