Ingredients
  1. 1 extra large zucchini or 2 larger zucchinis
  2. 1lb extra lean ground beef (hormone and antibiotic free if possible)- OPTIONAL this recipes was made without meat.
  3. 1/2 cup chopped cherry tomatoes
  4. 1/4 cup chopped fresh basil
  5. 1 cup chopped mushrooms
  6. 1/4-1/2 cup broccoli
  7. 1/2 tsp. minced garlic
  8. Dash of olive oil
  9. 1/4 cup parmesan cheese (optional)
  10. 1/4 mozzarella cheese (optional) OR goat/feta cheese
Instructions
  1. Preheat your oven to 350 degrees.
  2. Slice your zucchini in half lengthwise and scoop out the insides to create a shell. (Save the insides)
  3. Place your zucchini on a baking sheet with the skins down and spray with olive oil and sprinkle with pepper
  4. Bake the zucchini for 20 minutes
  5. While the zucchini is baking brown your ground beef in a skillet sprayed with olive oil
  6. While the beef is cooking chop your veggies including the insides of the zucchini
  7. Once the beef is fully cooked add in the mushrooms, tomatoes, broccoli, basil, garlic, and extra zucchini
  8. Cover the skillet and cook the mixture, stirring occasionally, until the vegetables have cooked
  9. Lastly, add in the Parmesan cheese to your meat and vegetable mixture and combine
  10. After 20 minutes remove the zucchini from the oven and place the mixture in the two halves
  11. Top each side with mozzarella cheese OR goat/Feta cheese if desired and bake for 20 minutes longer

  1. This meal can be made with or without meat and dairy- all up to you!
