Protein Pumpkin Squares

Ingredients:

  • 1 cup coconut flour
  • 2 scoops Sunwarrior vanilla protein powder
  • 2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon allspice
  • 1/8 teaspoon nutmeg
  • 4 egg whites (or veganize it with an egg substitute)
  • 8oz pumpkin puree
  • 4oz water or almond milk
  • *optional: ½ cup of your favorite nuts

Instructions:

Preheat oven to 350 degrees.

Mix flour, protein, cinnamon, allspice, nutmeg, baking soda, and salt together in a bowl. If you’re adding nuts, do so here.

Mix egg whites, pumpkin puree, and water in a separate bowl.

Add wet ingredients to dry ingredients and mix together.

Coat 8×8 glass dish with coconut oil to keep pumpkin protein squares from sticking.

Pour ingredients into dish.

Bake 20–30 minutes.
